Murugal Rava Dosa


Ingredients:

Rava Dosa Batter:

Rava(sooji) - 2 cup
Maida - 1/2 cup
Rice Flour- 1 1/2 cup
curd - 1 tsp
salt as required

To Fry:
Urad dal -2 tsp
Mustard-1 tsp
Curry leaves-4
Small onion(optional)-3
Oil or Ghee as required

1.Mix all the batter ingredients in Required amount of water to make a thin batter
2.Keep aside for an hour
3.Heat a pan and add 2 tsp oil and mustard when it starts splutter add urad dal
4.Add curry leaves and onions(finely chopped) when urad dal become golden brown fry it till the onions become golden brown.
5.Add this to the rava batter and mix it well
6. Add 2 tsp oil to the pan and pour the batter in circular motin starting from the outerside fill it upto center.
7.put 1 0r 2tsp ghee or oil on the dosa
8.when it become golden brown turn it to the other side.
9.Serve hot with coconut chutney.

Veg Cutlet



Ingredients:

Potato-3
beans-5
carrot-1/2 or 1
big onion-1
ginger- small piece
green chilli-1
chilli powder
eggs-1
bread crumps
salt



1.Boil the potatos(just sufficient amount of water to make the potatos boil) because dry boiled potatos are easy to make cutlets.
2.Take beans ,carrt,onion,ginger,green chilli and cut into small pieces.
3.Put oil in the pan and fry the items in the above point for 2 min.
4.Add salt and chillipowder,Mix well
5.peel off the boiled potatos and crush nicely,add the above mixture to the crushed potatos and mix it well
6.Make balls and make any shape u want(oval,heart,round etc)
7.dip it in the nicely beaten egg
8.dip it in the bread crumps
9.heat oil and fry it till it becm golden brown
10.Tasty cutlets ready!

Onion&Cabbage Pakoda


Ingredients:

big onion - 2
cabbage - 1/4
basan
rice flour
chilli powder
salt


1. Take a big bowl and add basan,rice flour,chilli powder and salt and make a thick batter by adding water to it.
2.cut the onions and cabbage into half then into lengthwise and and add these in to the batter
3.mix the contents throughly
4.Heat sufficient amount of oil in a deep pan
5.Take small part of mixer of onions and cabbage dipped in the batter and put it in the oil and deep fry them untill they become golden brown.
6.Repeat the above for the rest of the mixer
7.Tasty and crispy onion&cabbage pakodas are ready.
8.Serve them with mint chutney and kechup

malligai poo idly with Vadakari




Ingredients :

Channa Dal-1 cup
coconut milk-1 cup
tomato-1
big onion-1
chilipowder-2 tsp
Turmeric Powder-1/4 tsp
Corriander Powder-1 tsp
salt as required
oil as required

Ground masala :

ginger - 1 inch
garlic - 4
cinnamon&cardomon& clove - 1 each
green chillies -2
saunf- 1tsp
1.Soak the chana dal for 1 hr and then grind to a coarse paste.
2.chop the onions and tomatoes into small pieces.
3.Take one tsp of the ground masala paste and mix with the channa dal paste and add salt.
4.Take small amount of this mixture and Keep it aside
4.Fry the rest of the mixture in oil in vadai shape and keep aside.
5. Next heat some oil in a kadai and add the rest of the ground masala and once it is well fried add the chopped onions and tomatoes
6.Add the rest of the mixture and add chilli powder and turmeric and coriander and saute well.
7. Add coconut milk along with this and bring to a boil once.
8. Now, divide the vada balls into a haphazard manner and add it and add some water and once it boils remove from the fire.

Crispy Dosa




Ingredients:

Idly rice:urad dal - 3:1
Fenugreek -2 tsp

Salt as required


Dosa Batter:

1.Wash cleanly twice before and soak all the ingredients separately.
2.Soak the ingredients for 4 to 6 hours.
3.Grind first the dal and fenugreek

4.Then grind the rice smoothly.
5.Mix together thoroughly and then add required amount of salt and mix it again

6. Keep closed in a dark, dry place for 8 hours and let it ferment

To make crispy Dosa:

1. Take a tawa heat it and apply little oil
2. Mix the batter briskly adding some water. Batter should be little thinner than idli batter.
3. Pour this on a tawa and immediately spread in the circular motion till thin then add ghee or oil say one to 2 tsp in the dosa and keep the stove on the medium fire
4. After browning of dosa take out and serve with coconut chutney and sambhar.

Aval(poha) Fry


Ingredients:

Aval (poha) -2 cups
mustard - 2 tsp
Groundnut - 20
Channa dal - 3 tsp
Urad dal - 2tsp
Chilli Powder - 1 tsp
Salt as required
canola Oil




1.Take the kadai or pan and put the mustard seeds and when it starts splutter add ground nuts in it
2.Fry the groundnuts untill it become crispy then add channa dal urad dal and curry leaves.
3.Fry all the above untill urad dal and channa dal become golden brown
4.Add chillipoder and salt saute it well with the other ingredients
5.Add aval(poha) to this mixture and mix it throughly and keep it in low flame for 5 minutes
6.serve hot
7.This is a perfect snack to have with tea in the evening.
